Germination Information: If you want to give your plants an extra-early start or have control over their exact placement, you could start the seeds indoors in mid- to late spring: sow 1/8 to 1/4″ deep in pots or deep cell packs in a warm, bright place. It’s usually easier to just sow them directly where you want them to grow, though, in late spring to early summer. (Plants from direct-sown seeds tend to get much taller, in my experience.) If you allow the heads to mature in the garden, you will find self-sown seedlings the following year.

Description

‘Hopi Red Dye’ amaranth (Amaranthus) creates a stunning tall focal point in an ornamental border or edible planting, with deep red stems, leaves, and flower plumes that hold their color from germination to frost. Try the young leaves in salads; the black seeds of this ancient grain are edible too. The plants can reach 6 to 7 feet tall in rich soil; 4 to 5 feet is more likely in average garden soil. (Pinching off the main growing tip at some point in early to midsummer can produce branching, if you’d rather have a shorter plant with more, but smaller, plumes.) Full sun. Annual.
